Steak Frites + Truffle Fries

Ingredients
- 2 lbs russet potatoes, peeled and cut into thin strips (about 1/4 inch thick)
- 3 tablespoons Rao’s Homemade Limited Reserve Extra-Virgin Olive Oil
- 2 tablespoons truffle oil
- 2 cloves garlic, minced
- Salt to taste
- Freshly ground black pepper to taste
- 2 tablespoons finely chopped fresh parsley (optional)
- Rao's Made for Home Ketchup for dipping
- Grated Parmesan cheese for serving (optional)
- 2 beef tenderloin steaks, about 1 inch thick
- Salt to taste
- 2 tablespoons whole black peppercorns

Truffle Fries
Preheat your oven to 425°F (220°C).
- Rinse the cut potato strips under cold water to remove excess starch. Pat them dry thoroughly using paper towels or a clean kitchen towel.
- In a large bowl, toss the potato strips with the Rao’s Homemade Limited Reserve Extra-Virgin Olive Oil, truffle oil, minced garlic, salt, and freshly ground black pepper until evenly coated.
- Spread the seasoned potato strips in a single layer on a baking sheet lined with parchment paper or aluminum foil, making sure they are not overcrowded.
- Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the fries are golden brown and crispy, flipping them halfway through the cooking time for even browning.
- Once the fries are done, remove them from the oven and transfer them to a serving dish.
- If desired, sprinkle the truffle fries with finely chopped fresh parsley and grated Parmesan cheese while they are still hot.
- Serve the truffle fries immediately as a delicious and indulgent snack or side dish.

Preheat your grill to medium-high heat.
- Season the beef tenderloin steaks generously with salt and pepper on both sides.
- Drizzle olive oil over the steaks to lightly coat them.
- Place the steaks on the preheated grill and cook for about 4-5 minutes per side for medium-rare, or adjust cooking time according to your desired level of doneness.
- While the steaks are grilling, prepare the sauce by mixing all ingredients together.
- Remove the steaks from the grill and let them rest for a few minutes.
- Serve the grilled steak. Garnish with chopped fresh parsley.
