Tender slices of seasoned chicken and crispy pancetta are tossed with casarecce pasta in Rao’s Homemade® Creamy Roasted Garlic Sauce for a rich, savory dish layered with flavor. Sautéed shallots and a touch of spice from paprika and red pepper flakes add depth, while the velvety sauce brings everything together. Finished with Pecorino Romano and fresh parsley, this dish delivers a comforting yet elevated take on pasta night.

Ingredients

  • 8 oz. Rao’s Homemade® Casarecce Pasta 
  • 1 jar (24 oz.) Rao’s Homemade® Creamy Roasted Garlic Sauce 
  • 4 oz. pancetta, diced 
  • 1 pound thin-sliced boneless, skinless chicken breasts 
  • 3 tablespoons chopped fresh parsley, plus additional for garnish 
  • 1 teaspoon paprika 
  • 1/4 teaspoon red pepper flakes 
  • 1 tablespoon olive oil 
  • 1 large shallot, thinly sliced (½ cup) 
  • Grated Pecorino Romano cheese 

Directions

  • Cook pasta according to package instructions.  
  • Meanwhile, cook the pancetta in a 12-inch skillet over medium heat until crisp. Remove the pancetta from the pan and drain on a paper towel-lined plate. Reserve the drippings in the pan. 
  • Season the chicken with salt and pepper then toss with parsley, paprika and red pepper flakes. Add the chicken to the skillet and cook on medium-high for 6 minutes, turning once, or until golden and no longer pink in the center (internal temperature should reach 165° F). Remove chicken from the skillet, cover and keep warm. 
  • Reduce the heat to medium. Add the oil and shallot, cook for 5 minutes or until shallot softens. Season with salt and pepper to taste. 
  • Add the sauce and heat to a boil, scraping up any browned bits from the bottom of the skillet.  
  • Add the cooked pasta and pancetta to the skillet and toss to coat. Heat through for 1-2 minutes.  
  • Slice the chicken very thin and serve over the pasta. Top with cheese and chopped parsley. 

Tips

Serve with crusty bread and a simple green salad.
